My little brother started taking piano lessons this week and learned his very first song. It's so exciting! I remember taking piano lessons when I was about his age and not liking it at all. Maybe it was because my teacher wouldn't let me play anything other than classical music... But Josh's teacher is super talented, nice, and will let him play a variety of different genres! It's awesome because he is so eager to learn and practices whenever he can. I'm so proud :)

It's Sunday! That means happy thoughts because a whole new week is ahead of us. The weather was all over the place this past weekend, filled with a mixture of snow, rain, wind, and a some sunshine. And spring is here so my allergies are back and I've been tearing and sneezing up a storm this past week. BUT I'm looking forward to tonight (because of The Walking Dead) and next weekend because I'm going to New York and I get to see Kyle, eat some good food, and watch some NBA basketball! Muffins Anyone?
Yesterday, I decided to make some banana chocolate chip muffins! Bananas were on sale this week, so my mom thought it would be a good idea to buy three bundles cause why not, right? Well we still had some bananas leftover from the last grocery visit so we pretty much had a whole kitchen of bananas. The great thing with bananas, other than the nutrients they hold, is that they're "in season" year round! These muffins are easy to make and quite delicious! ;)
Yields: 12 muffins
Muffins
- 1 3/4 cups all purpose flour
- 1 cup white granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup butter (melted)
- 1/2 cup chocolate chips
- 3 ripe bananas (mashed)
- 2 large eggs
Topping (optional)
- 3 tablespoons melted butter
- 1/4 cup white granulated sugar
- 1/2 teaspoon ground cinnamon
Procedure:
Preheat your oven to 350° F. Place all your dry ingredients (flour, sugar, baking powder, baking soda, salt, chocolate chips) in one large bowl and stir to combine. In a separate bowl, combine the wet ingredients (lightly beaten eggs, mashed bananas, melted butter, and vanilla extract).Slowly fold your wet ingredients into the dry ingredients until combined. Scoop the batter onto lined muffin tins and bake for about 25 minutes. Remove from the oven and let it cool for 5 minutes before you dig in!
Topping (optional):
Brush the melted butter on top of the muffins then dip into the cinnamon sugar mixture!
Tips:
- Let the butter cool before mixing it with the eggs
- You can add nuts or substitute for the chocolate chips
- Don't over mix your batter - it will lead to a rubbery bread
